Clandestine Prosecco-Rose

Prosecco Rosé

  • Origin: King Valley, VIC
  • Type: Prosecco Rosé
  • Tasting notes: Aperitif style; drier, mixed berry fruits
  • Aroma: Sweet, mixed red berries.
  • Food match: Brunch foods like pastries and fruits.

The second vintage of Clandestine’s unique Prosecco style – with a slight blush of Barbera skins – is sourced from a certified sustainable single vineyard in the King Valley; the home for Australian Prosecco. Theirs is made into a more aperitif style; drier, but with a cascade or mixed berry fruits, light yet full-flavored palate with a consistent bead of racy bubbles – this is the perfect way to start (or finish) your next Sunday brunch!

 

Pinot Gris

  • Origin: King Valley, VIC
  • Type: Pinot Gris
  • Tasting notes: Floral, citrus, hints of barrel
  • Aroma: Floral, honeysuckle, almond blossom
  • Food match: Amazing with any Chinese, Indian and Mexican dishes

This pale straw-colored Gris features bright green highlights. Its intense aroma includes almond blossom, honeysuckle, and floral notes. The taste follows with vibrant citrus, lemon, and lime zests, complemented by subtle barrel hints and a touch of creamy lees for mid-palate texture. The clean, crisp acidity lingers, inviting another sip!

 

Chardonnay

  • Origin: Wilyabrup, Margaret River.
  • Type: Chardonnay
  • Tasting notes: Grapefruit, oak
  • Aroma: Citrus, cashews
  • Food match: Roast chicken with herbed potatoes and fresh garden salad would be our go-to.

Bright with a light green hue, the bouquet is an enticing mix of flintstone, cashew and citrus, this follows onto the palate with grapefruit intensity and depth of flavour, held in check by tightly wound acidity. The oak plays its part in a supporting role, which allows for a long clean and delicious finish.

 

Mourvèdre Rosé

 

  • Origin: McLaren Vale, SA
  • Type: Mourvèdre Rosé.
  • Tasting notes: Oak tones, maraschino cherries, exotic spices
  • Aroma: Mixed cherries, herbs and spice
  • Food match: Something spicy like an Indian curry.

A lorious light salmon colour with bright flouscents, a lifted perfume of exotic herbs, spice and mixed cherry – ripe, sour and maraschino. Subtle oak tones give mouthfeel and texture, crisp acidity frames and refreshes the palate with length that will keep you satiated!

 

Malbec

  • Origin: Margaret River, WA
  • Type: Malbec
  • Tasting notes: Cherry cola, sarsaparilla, oak
  • Aroma: Mocha, dark chocolate
  • Food match: Something from Latin America would be so delicious with this drop.

Beetroot purple and bright in colour, intensely lifted aromatics of violets, spice, mocha, dark chocolate with a full spectrum of blue fruits. The palate rolls through, filling the mouth with cherry-cola, sarsaparilla and a lick of liquorice flavours with soft gentle oak tannins and a juicy, long finish.

 

Shiraz

  • Origin: Mount Barker, WA
  • Type: Shiraz
  • Tasting notes: Cherry cola, sarsaparilla, oak
  • Aroma: Mocha, dark chocolate
  • Food match: Slow cooked short ribs. Yum, yum.

Purple and bright in colour, floral and lifted spice bouquet with hints of oak. Cherries and red fruits collide across the palate with earthy, graphite notes giving added texture and interest. Sweet and savoury at the same time, the wine completes its palate journey with white pepper notes & fruit generosity while the older oak lends a rounded, soft, elegant and juicy long finish. Pair with winter braises, slow-cooked and/or smoked meats (American style brisket or short ribs), or northern Italian cuisine.

 

Cabernet Sauvignon

  • Origin: Mount Barker, WA
  • Type: Cabernet Sauvignon
  • Tasting notes: Blackcurrant, plums and chocolate
  • Aroma: Fruity, cedar oak.
  • Food match: Roast lamb and delicious roast vege are the perfect pairing to this Cab Sav.

Dark purple and bright in colour, with classic cool mint and lifted cassis bouquet with warm, cedar oak aromas. A brooding palate of blackcurrant, plums, chocolate and mocha flavours jostle for position, while a generous fruit ball forms in the mid-palate. Quality oak and time ensure long, soft and integrated tannin structure, wrapped in firm acidity – giving this Cabernet enhanced texture and complexity. Pair with slow-roasted lamb, BBQ’s and firm cheeses.
