The wild and extraordinary story of Billson’s began waaaaay back in 1865 when Billson’s Brewery was established in beautiful Beechworth. In 2017, Nathan Cowan and his wife Felicity became the proud new owners of the dusty old brewery. It had scaled back production to several well-loved cordials and become home to a few hundred pigeons. The Cowans decided to expand and celebrate these incredible recipes.
The 150-year-old building and the brewery’s access to fresh spring water are two essential ingredients for the business, earning it an Australia-wide reputation for producing top-quality beers, sodas, spirits and cordials. The Billson’s range covers premixed spirits, gin, vodka, ales, lagers, stouts, mixers, still and sparkling water, traditional cordials and classic sodas in various flavours.

Quick Facts
- Billson’s Brewery was founded in 1865.
- The building was bought by Nathan and Felicity Cowan in 2017.
- Billson’s Brewery was founded by Englishman George Billson, who made his way to Australia via the California gold rush of the mid-1800s.
- Much of the brewery’s history has been carefully compiled by the Cowans with the help of a historian. Cowan said that through the archives, they determined that the earliest record of a Billson’s beer was in 1865.
- It’s been 70 years since the brewery has had a liquor licence, but one was granted to the Cowans on Boxing Day, 2018.
